Chicken (or not) Tortilla Soup
•Gluten-Free • Dairy-Free • Easily made VEGAN • Instapot
Ingredients
2 cartons low sodium veggie or chicken broth
1 Tbsp extra virgin olive oil
2 pounds of chicken breast (or throw in fresh cauliflower if you’re living that veg life!)
2 cans diced tomatoes w/ chilies (I love Rotel, you can also choose your heat level!)
2 cans black beans
1 cup fresh cilantro, chopped
1/2 large white or yellow onion, chopped
4-5 big handfuls of fresh spinach
3 limes worth of juice
2 tsp garlic powder
2 tsp chili powder
3 tsp salt
2 tsp pepper
2 tsp paprika
2 tsp crushed red pepper
Avocado
Corn tortilla chips or Beanitos
Please note that while there are many benefits to buying local and organic, preparing fresh foods in a way that works best for you and your budget is always a win! Don’t let your ability to access local/organic discourage you from going for it! Any fresh choices are more beneficial than processed ones.
Let’s put it together!
Put instapot on sauté, add your 1 Tbsp of EVOO, 1/2 onion, chopped & caramelize (this means that your onions get translucent and slightly brown, but not burned)
Pour in 2 cartons of veggie or chicken broth
Add in 2 cans diced tomatoes w/ chilies, 2 cans black beans, spices, lime juice & cilantro
Stir, TASTE, and adjust, stir and taste again : )
Add in spinach (and cauliflower if you’re going veg), stir
•I know this seems like a TON, but it cooks down!
Place raw chicken directly into the instapot
Seal up instapot, change to pressure cooker setting & set for 14 minutes
Let pressure release naturally
Pull out chicken & shred then place delicious chicken back into the instapot
Ladle into your fave bowl, top with avocado slices, cilantro, tortilla chips, & ENJOY!
I find this soup gets EVEN better the next day and day after as all the flavors continue to meld! This recipe definitely has some heat, fearlessly experiment with the spices and ingredients to find what works for you best : )
