Oh-so Sweet PoTacos

Gluten-Free • Dairy-Free • Easily made Vegan • 1 Pan • Makes 4

Ingredients

4 medium sweet potatoes

1.5ish pounds of ground beef, turkey or veggie crumbles

1 tsp sea salt

1 tsp black pepper

1 tsp dried onion powder

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp dried red pepper flakes

1/2 cup cherry tomatoes, quartered

1 avocado, diced

1 whole scallion, minced

Fresh cilantro

Please note that while there are many benefits to buying local and organic, preparing fresh foods in a way that works best for you and your budget is always a win! Don’t let your ability to access local/organic discourage you from going for it! Any fresh choices you make are more beneficial than processed ones.

Let’s put it together!

  1. Preheat oven to 400 degrees

  2. Rinse sweet potatoes and pat dry. Place on tin-foil lined baking sheet (saves on mess), and bake for approx. 40 minutes until easily forkable and soft

  3. Cook 1.5ish pounds of your choice of protein in a skillet over medium-low heat. Make sure to break up into crumbles

  4. Add ALL spices (1 tsp sea salt, 1 tsp black pepper, 1 tsp dried onion powder, 1 tsp smoked paprika, 1 tsp ground cumin, 1/2 tsp garlic powder, 1/2 tsp dried red pepper flakes) to your protein, stir, cook through and drain

  5. TASTE the meat (once cooked) to ensure you like the balance of spices, adjust as you see fit

  6. Once sweet potatoes are fully cooked, carefully remove them from the oven, slit down the middle, fill with the protein of your choice, and pile on the tomatoes, avocado, cilantro, and scallion

  7. Enjoy!
